Now that the holiday season has arrived, I’m trying to go light on my meals knowing the inevitable carb and dessert fest that awaits me at this year’s holiday parties. This salad will offset that right?! Totally. For sure. Probably not. Oh well, I’m trying.

I have a confession. I’m not thaaaat into veggies. I mean I try, but by and large most vegetables are not my best friend. Greens and I on the other hand, have been tight for quite a while now.

Arugula is my homie for life. Its peppery flavor fulfills my salad cravings every time. So naturally, one of the greens in my new favorite salad is arugula.

Let’s get real though, the real burst comes from the apple cider vinegar in the dressing and the pickled onions. If you and onions are not on great terms I totally understand. Not to worry, the salad will still have a ton of flavor even without them.

Now on to the good stuff. These apples. The sweetness coupled with the tang of the vinegar are such a yummy combination. I’ve used Ontario’s mutsu apples here but throw in whatever apple floats your boat.The pecans then top it off with an extra crunch.

Now what salad is complete without cheese? No salad, that’s what. That’s why this baby comes with both brie AND goat cheese. The cheeses not only absorb the acidic flavor from the dressing but add another textural dimension.

Apple Pecan Salad with Brie and Basil

Yields: 6 Servings Total Time: 10 minutes

Salad Ingredients:
  • 3 cups arugula
  • 3 cups spinach
  • 1-2 apples of your choice
  • 100g of brie
  • 2 tbsp goat cheese
  • 1/2 cup pecans
  • 1 tbsp chopped fresh basil
  • 1/2 cup granola
  • Pickled onions
Salad Directions:
  1. Put all ingredients in a large bowl and toss.
Vinaigrette Ingredients:
  • 1/2 cup olive oil
  • 2 tsp honey mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • pepper to taste
Vinaigrette Directions:
  1. Mix all ingredients together in a bowl and stir. Drizzle on top of salad.
