Let me break hakka down for you. Chinese flavors come together with Indian spices to create the world’s greatest marriage…or at least that’s how my taste buds feel. That’s right, it’s an entire cuisine devoted to Chinese and Indian fusion dishes. WHAT?! *Mind = blown*

I think all you fusion food lovers will agree that the pinnacle of hakka cuisine is definitely chicken manchurian. Do you feel me?

Chicken manchurian combines spicy red chilies, Chinese chili pastes, tons of ginger-garlic and fresh herbs for a gigantic burst of flavor sitting on your plate. Typical chicken manchurian recipes come with a fair amount of sugary sauce (which is damn good, don’t get me wrong) and long processing time.This recipe however, is made very simply and includes no additional sugar and very little flour. Healthy and simple is the name of the game.

Chicken Manchurian

Ingredients

    Marinade
  • 1 tsp corn flour
  • 1 tbsp Chinese chili paste
  • 1 tsp ginger-garlic minced
  • 1 tsp soy sauce
  • 1 egg white
  • 1 red chili, minced
  • Chicken Manchurian
  • 3 chicken breasts, cut into 1 inch pieces
  • 3 tbsp vegetable oil
  • 2 tbsp sriracha
  • 1 tsp crushed chili flakes
  • 1 tbsp Chinese chili paste
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tsp soy sauce
  • 1 tbsp cilantro, chopped
  • green onions (to taste)

Instructions

  1. Mix all ingredients of the marinade in a large bowl. Add chicken to the marinade and mix until fully coated. Allow to sit for 2 hours.
  2. In a medium skillet over medium heat, add 1 tbsp oil, onions and peppers and fry until slightly charred.
  3. While the onions and peppers are cooking, turn on another burner to medium-low heat and add a large frying pan. Add 1 tbsp of oil, garlic and ginger. Cook until slightly browned.
  4. Add the sriracha, soy sauce, chili flakes and chinese chili paste and mix. Allow the sauce to cook for 1 minute and add the chicken and cilantro to the pan. Cook until the chicken is cooked through, stirring every few minutes.
  5. Just before chicken is done, add the cooked peppers and onions, mix and sautee for 1 minute.
  6. Add green onions to taste and serve.
