My first time trying this flavor explosion salad was when I lived in Dearborn, Michigan. There is a huge Arab population in Dearborn and I would go to my friends’ homes or out to dinner and more times than not, fattoush would be served. Truth be told, I was not a fan of onions, parsley, cucumbers and pretty much all of the essentials that make up this salad (What was I thinking and how did I live? Couldn’t tell ya). I legitimately started eating fattoush simply to avoid being rude and turning my nose up to a meal that was just prepared for me and now, I am totally OBSESSED with this salad.

I mean, what in the world is there NOT to love? Feast your eyes on this color explosion right here. Every single thing in fattoush is fresh, which is what I love most about Middle Eastern food. Freshly cut vegetables on top of a bed of lettuce and chopped parsley adorned with baked pita chips and a spiced, lemony garlic dressing. Holy YUM in a bite. Last but certainly not least, fattoush is sprinkled with a signature Middle Eastern spice called sumac which is a purple color and has a lemony, tarty flavor.

I feel like it’s safe to say that generally when you think of Middle Eastern chicken, you think of shawarma. In my opinion, this chicken right here puts shawarma to shame, every-single-time.

Shish tawook is made with a yogurt marinade base. Yogurt is mixed with garlic, lemon juice, tomato paste, vinegar and a whole host of spices. It covers the chicken and is grilled to perfection. Oh, YAAASSS.

For all of you garlic lovers out there, shish tawook is usually served with what personally is my favorite condiment, toum. Toum literally translates to “garlic” which is pretty accurate considering that it’s basically straight up fluffy cloves of garlic. The cloves are emulsified with lemon juice and oil to create literally the perfect compliment to this chicken dish.

Guys. This recipe is easy, it’s fresh and it’s super healthy. You NEED to make this for lunch or dinner this week. Your taste buds and your waistline will thank me!

Fattoush Salad and Shish Tawook

Ingredients

    Fattoush Salad
  • 1 pita bread round, broken into pieces
  • 1 tsp sumac
  • salt and pepper to taste (on pita)
  • 2 tbsp olive oil
  • 5-6 cups chopped romaine lettuce
  • 1 cucumber, chopped
  • 2 green onions, chopped
  • 1 red onion, sliced
  • 2 red peppers, chopped into 1 inch pieces
  • handful of cherry tomatoes
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • Vinaigrette
  • juice of 1 lemon
  • 1 tsp sumac
  • 1/3 cup olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder (or 1 clove of garlic, minced)
  • pinch of cinnamon
  • salt and pepper to taste
  • Shish Tawook Chicken
  • 4 chicken breasts
  • 1/2 cup lemon juice
  • 1 cup greek yogurt, plain
  • 6 tbsp olive oil
  • 6 minced garlic cloves
  • 2 tbsp apple cider vinegar
  • 1 tbsp tomato paste
  • 1 tsp crushed chili flakes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional)
  • salt and pepper to taste

Instructions

    Fattoush
  1. Set the oven at 350F, drizzle the olive oil over the pita chips and toast until just browned. Remove from the oven and while hot, sprinkle the sumac, salt and pepper. Set aside.
  2. In a large bowl, mix the lettuce, vegetables, parsley and mint.
  3. Whisk all vinaigrette ingredients together in a small bowl.
  4. Drizzle the vinaigrette onto the salad and toss to cover salad completely. Add the pita chips and sprinkle the remaining sumac (add more if you like the tang taste) and toss again.
  5. Shish Tawook
  6. Combine all marinade ingredients in a large bowl.
  7. Cut chicken breasts into 1 inch pieces and toss into the bowl. Mix to coat with the yogurt sauce. Marinate for 2 hours up to overnight.
  8. Put chicken onto skewers and grill until chicken is no longer pink and is cooked through. Serve on top of fattoush salad.
