Brace yourselves for a toast explosion! I’m counting down 4 of my favorite ways to use toast and it is going to be glorious.
It wouldn’t be me if I didn’t start with a traditional Middle Eastern brunch, so obvi totes, shakshuka is first up. What is there not to love about a straight up chunky, tomato sauce slowly simmered in simple spices and then baked with eggs?! Mind blastingly amazing stuff right here. Toss a heaping scoop of tomato sauce and eggs on top of a piece of toast (personally, I love sourdough) and sprinkle with parsley. Cut into the egg for a bit of ooey-goey yolk action, take a bite and tell me you haven’t just gone to heaven.
2. Banana-Cream Cheese Filled French Toast with Berry Coulis
My motto this summer has most definitely been, ‘if you wanna be extra, BE EXTRA!’. This next toast favorite screams that in more ways than one. Whip up a simple banana and cream cheese mixture (this alone, I could eat with a spoon) then spread it onto 2 pieces of toast. Dunk into a cinnamon, sugary egg mixture and fry in butter. If you’re mouth isn’t watering yet, go and check your vitals. Top the french toast with a homemade berry coulis. Wait, there’s more!
Last but certainly not least…oh yes…throw some nutella on top. At this point you might be questioning, ‘have I taken this too far?’. The answer my friends is no, you absolutely have not taken it too far.
3. Ricotta Toast 3 Ways
So, technically this is 3 for the price of one. I’ve included 3 different ricotta toasts in this post and they are each divine. Ricotta and rosewater mixed with bananas and pistachios? Yes, please. Lemon juice ricotta with tangy blueberries? Yes, please. Feta and Ricotta with sliced strawberries and basil? Yes, please! Each of these treats are light, simple and is made in only a few minutes. Flavor bombs whipped up in a few minutes – you cannot go wrong.
4. Apple Cranberry French Toast Bake
This right here is a fan favorite in our house for several reasons. #1. It’s french toast and how can you not love french toast? #2. The apples are caramelized in cinnamon and sugar and the mixture of flavors with the cranberry sauce is quite heavenly. #3. It has hunks of cream cheese hidden throughout for a seriously yummy surprise.
This french toast bake can be prepped the day before (when the bread sits in the cinnamon/sugar egg mixture it becomes incredibly soft) and then popped in the oven the morning after. This giant pan worth of french toast can feed an army so everyone gets their share of the breakfast goodness. It’s a traditional breakfast dish with a spin and most importantly, tastes incredible.
