With only one more day left of summer *tears* I want to take a look at some of my favorite eats from my favorite season of the year…

Wild, colorful fruits, grilling out everyday fresh herbs galore and fruity bevvies are just a few of the things that make it hard for me to say goodbye to summer. The good news is, a lot of the recipes in this summer roundup can be made (at least a variation of them) all year round…because whoever said you can’t have a pina colada in the middle of December?! That’s preposterous, I tell you!  Read along with me as I count down the recipes that have made me infinitely happy this summer:

1. Pineapple Piña Coladas 

Nothing says warm, beachy weather and relaxation quite like a pina colada. These frosty things are the classic cocktail but with straight up coconut shavings to give a real coconut punch to the face. The fresh pineapple takes it to a next level. Pop in a straw, a mint leaf and a paper umbrella and you’re transformed to a beach immediately.

2. Fattoush with Shish Tawook

This one is a winner all year round but it’s the grilled peppers and grilled chicken that really takes it to that next level. If you’re the type to put on your winter boots and stand out in the snow with a hot grill, do it! It’s totally worth it. With tons of fresh vegetables, mixed greens, herbs and bursting lemon juice, this salad is incredibly healthy without compromising on flavor.

3. Coconut Yogurt Parfait Popsicles

Clearly I’m obsessed with coconuts! This is such a super simple and healthy recipe that is perfect for a snack or sugar craving. These popsicles are made with Greek yogurt, tons of coconut shavings, fresh berries and granola. That’s it! Oh, and stevia to sweeten it up some more. Much to my dismay, berries are obviously not grown all year round however frozen berries do the trick as well! You’re in luck my friends.

4. Jerk Chicken Tacos with Grilled Pineapple

Clearly, I’m also obsessed with pineapples too but who could resist a spicy taco topped with chunks of pineapple, I mean really?! If I had to choose one meal to eat on planet earth, it might just be this one. It just ticks off so many boxes! 1. Tacos (’nuff said) 2. Grilled jerk chicken, hallelujah 3. Spicy habanero aoli 4. Pineapple. Not just any pineapple, it’s grilled in brown sugar!  Honestly, if you can handle the heat then these tacos are a must have. I plan on making them all year round (the pineapples might be a maybe depending on what’s in stock) and I highly suggest you do the same!
