Let’s face it, can you ever really go wrong with ice cream? Trust me when I say, cherry ice cream with dark chocolate chunks has a whole lot goin’ right.
Not too sure about you but I’m a sucker for anything combining fruit and chocolate together. Both are sweet but still have contrasting flavors and I could eat it all day, every day. Isn’t it so sad that we live in a world where continually eating ice cream is completely unhealthy? It’s just cruel, I tell you.
So, I’m a nerd and I looked up why chocolate and fruit pairings are so down right divine. It’s fascinating! Dark chocolate, while still sweet, tends to be more bitter with a nutty and earthy tone which is neutralized by the sweetness in fruits. Plus for me, I just love the crunchy texture of dark chocolate while I’m taking a bite into a huge scoop of cherry ice cream. Speaking of which, checkout this scoop of goodness right here…

Ok, enough nerd talk (although I could geek out on the science behind food for-freaking-ever!). I find it a little strange that I’m sitting here talking about ice cream when Fall is literally in a few days but it’s hot as hades in Toronto right now. Every day I’m like, “wait, I moved from Georgia to Canada right?” because it seriously feels the other way around. I’ll take the heat though, for real. Plus, it only makes eating ice cream more appropriate. As I’m writing this it’s scorching and a cone of cherry and dark chocolate ice cream is sounding mighty fine.
Can I just tell you, this recipe is like ice cream for dummies. It’s no churn, so no ice cream maker necessary and seriously takes 15 minutes to put together. Freeze it and you’ve got a huge batch waiting for whenever you need it! I had guests staying at my place last weekend and serving dessert was a no brainer. It’s almost hilarious how the words “homemade ice cream” sounds so fancy and gourmet yet the process is simple as pie. PS: can we talk about how innaccurate THAT statement is?! Pretty sure there is no such thing as a simple pie. We should really change that to “simple as homemade ice cream”. Anyways, point is, this ice cream is super simple to make!
Ok y’all, ride this heatwave while we got it! Cooling off with a batch of cherry and dark chocolate ice cream may just be the best decision you’ll ever make. I mean, that’s a slight exaggeration but your taste buds might just feel that way. Is there a variation you would make to this recipe? Something else that you would add or substitute? - 2 cups fresh cherries, pitted
- 1 cup dark chocolate
- 12 oz. sweetened condensed milk
- 1 tbsp stevia
- 2 cups whipping cream
- Chop chocolate into smaller shavings and chop cherries (I leave some larger and some smaller sized pieces).
- Add the whipping cream to a large bowl and using a hand mixer, beat until stiff peaks form (about 5 minutes)
- Add the stevia to the cream, mix using a spoon. Add the condensed milk in small batches and whisk. Add the chocolate and cherries and mix by hand.
- Pour the ice cream into a 9 inch round pan and cover tightly with plastic wrap, then with an elastic around it. Freeze overnight and serve the following day.
